MEXICAN BEEF TIPS
FLEXIBLE: Serve shredded over/in/with lettuce, cheese, rice or chips for nacho, burritto or quessidilla filling/topping.
Makes about 10 cups beef and liquid.
Note: The beef will hold on low in the slow cooker for up to two hours before serving. Or prepare beef completely up to 48 hours ahead and refrigerate. Then rewarm on the stove top over medium-low heat for 15 minutes or until heated through, or place in the slow cooker on low for 45 minutes to an hour or until heated through. You may cool the beef completely and freeze it (with cooking liquid) in an airtight container for two to three months. Thaw in the refrigerator overnight, and reheat according to the directions above.
• 41/2 lb. extra-lean beef tips for stew
• 1 tbsp. chili powder
• 1 tsp. ground cumin
• 1 tsp. onion powder
• 1 tsp. garlic powder
• 2 (14.5 oz. each) cans Mexican-style stewed tomatoes (or regular stewed tomatoes plus 1/2 tsp. additional cumin and garlic powder)
Directions: Place the beef tips in the bottom of a 5-quart or larger slow cooker. Sprinkle chili powder, cumin, onion powder and garlic powder over the beef. Add both cans of tomatoes, with their juices, pouring them directly over the tips. Cover the slow cooker. Cook on low for 8 to 10 hours.
Stir well, and serve immediately, or store according to the directions in the Note above.
Variation: Stove-top method
Heat 1 tablespoon vegetable oil in a 41/2-quart or larger Dutch oven or soup pot. Brown the beef tips for about 5 to 7 minutes. Stir in the spices and both cans of tomatoes, and cover the pot. Bring to a boil, reduce heat to low, and simmer the beef for 31/2 hours or until the beef cubes are so tender that they fall apart. Stir and check the liquid level periodically, and add water to keep moist but not soupy.

| In an effort to change Eagle Mountain's public image, council members are being asked not to commit any crimes. At a recent retreat, City Council members spent a day discussing what the city's top priorities should be. Among those were changing the city's reputation, tarnished by a long line of mayors and council members who have very publicly gotten in trouble with the law.Councilman David Lifferth, who is the city's most senior council member, having served since July 2005, had one piece of advice for the other members, many of whom were elected only in January. "Don't anybody commit any crimes," he told the council. Lifferth posted his comment as part of his council retreat notes on his blog at DavidLifferth.com, and confirmed the quotes to the Daily Herald in an interview. Unfortunately, his advice was no joke, he said. |
Really K? I Don't think this is uncalled for, but if does give me a lot of grief. I hope the following is read as thoughtful and balanced:
I love you, KtG, but I feel that Palin, McCain & Co. are wrecking our country and causing big divisions, were there were none before, in Families -- more than anything Obama ever has done or could do. She is divisive and mean spirited. She is using her children in politics. (About Bristol: Obama's mother was unmarried, pregnant and 18. HE has made a point of this and is not casting stones.) As for that nasty liberal media? Hmmm. They don't seem very liberal to me... even the most liberal papers/sites are gushing over Palin. Blog comments (recklessly) put her at the head of the ticket. Talk about celebrity, she eclipses Obama's star... meanwhile her family could star in it's own reality TV show.
Can we talk about a title wave? How about a tsunami of hysteria and hate? I really do not understand this. Hate towards anyone against her/their point of view and also hatred of her. I wonder if all this hasn't been trumped up to divert attention from the news of the day, which is grim for America and the world. Record high unemployment, the mortgage crisis, the record rate of the glaciers melting in Europe, and where is that mean ol'Osama bin Laden anyway ... The republicans have been in charge for the last 8 years, only the last two have the dems have a marginal majority, which is meaningless with Bush/Cheney in the White House.
Many of the things quoted [in the oft quoted email] are fear-mongering falsehoods. They are originally from an email written by a man named William Brown, an unknown entity. I have received it a few times before too. For example, about Senator Obama willingness to meet with foes, he referenced the beloved Ronald Regan and JFK who constantly spoke to the Soviet Union. Other items I'm not clear on. Many things are taken out of context, by both sides of the media. Check out snopes.com or http://www.factcheck.org/ ("a nonpartisan, nonprofit, 'consumer advocate' for voters that aims to reduce the level of deception and confusion in U.S. politics").
I'm truly sorry that you feel that any one who supports anyone other than McCain/Palin lacks morals.
On a lighter note: S might be old enough to go to Homecoming, which is crazy... but not so crazy to go in a duct tape dress!
